Paired with a multi-course tasting menu prepared by Executive Chef Anthony Stagnaro, this sensorial dinner captures the essence of seasons past by preserving the scents, colors and flavors of local flora through creative preparations. From rose petals and caviar to California Wagyu imbued with the brightness of homegrown hibiscus, every dish transforms a flower into something to savor long after the season ends.

Inspired by the fleeting beauty of flowers, our tasting menu draws upon a bouquet of blooms picked at their prime to capture the scents, colors and flavors of past seasons. This multi-course dining experience begins with dried rose petals preserved in red verjus and paired with caviar to balance the ephemeral nature of flowers with a timeless delicacy. Before dessert, hibiscus caramel becomes a rich beef demi-glace that accompanies California Wagyu, demonstrating the versatility of a summer flower as a warm and comforting sauce that complements the coolness of winter.
